coconut & raspberry slice

a little messy, a lot of tasty


90g butter
1/2 cup castor sugar
1 egg
1/3 cup self raising flour
2/3 cup plain flour
1/2 cup raspberry jam

and for the topping:
2 eggs
1/3 cup castor sugar
2 cups coconut

to make slice:
Preheat oven to 180 and grease a shallow baking tin. Cream butter, sugar and eggs together. Stir in flour and press evenly into tin. Bake in oven for 10 minutes. Remove and spread with jam, then topping. Bake for a further 35 minutes.

to make topping:
Beat eggs lightly & mix in sugar and coconut.
